Sylvain is a native of this region… his childhood was filled with the delicious dishes prepared by his mother and grandmother (both also from the Var region). He quickly developed a strong interest in cooking and began to learn the craft, progressing in Michelin-starred restaurants in the South of France. It was during this time that he met Laurence, his future wife, the daughter and granddaughter of renowned restaurateurs in Lyon.
Together, they set off to explore new horizons and gain enriching experiences before returning to Sylvain’s roots, as he missed his Mediterranean home. They continued their professional journey separately, working in some of the most beautiful establishments in the Gulf of Saint-Tropez. In the meantime, they got married, and their three children were born…
For the past few years, the desire to settle down and be together again has brought Sylvain back to his roots and those of his family for several generations. In fact, his great-grandfather was the postman in Gassin, and the village elders still remember his mother sitting on the ramparts…
